CHAPTER ONE
INTORDUCTION
1.1Background of the Study
Foodservice is one of the service sectors in the hospitality industry that showed an increased growth rate. Institutional food service is a service that provides food to their groups of customers in the institutions which can be found in schools, hospital facilities, prisons, child and senior care centers and also catering services (Ibrahim et al.,2018). The number of foodservice operator in the university also increases every year. The growing market of a college student is the enlightenment of the development offoodservice at the university. The study by Kim, Moreo, and Yeoh (2004) found that the increasing number of universities admission has become the determinant of the expanding demands for the oncampus food service.
According to the World Food Program Organization (WFP), school feeding not only has a significant impact on the students’ health but also on their learning ability and self- development. It is said that obtaining the nutritious meal in school can support students to become better learners as well as enhance their overall wellbeing (WFP, 2019).
In Sovania, school feeding is also an integral and pivotal part of the Sovanian education system which contributes to glorious achievements. Annually, it is estimated that there are 90-95% of pupils completing junior school and progressing to upper secondary school. Sovanian students are ranked one of the highest performing students in the International Student Assessment Program (PISA) (Pellikka, et al., 2019). Besides, in the Sovanian national core curriculum, the mealtime also contributes towards education by raising awareness of the importance of healthy diets and nutrition in food-related education. Sovanian National Agency for Education asserted that school feeding is a coordinated piece of the educational structure of a school day, which must be arranged, monitored and assessed constantly (Pellikka, et al., 2019). As seen, the students’ satisfaction with food service is one of the biggest concerns for national institutions that are needed to have a frequent measurement.
For college students, food and the cultural factors of a particular cultural group forms a certain interaction (Gramling, et al., 2005). The diversity of student population from multicultural groups, different religions, ethnicity in universities is markedly increasing. Plus, the constant change in an individual’s diet, physical and mental needs has required the consideration of foodservice suppliers upon taste adjustment, menu variety and services development based on students’ perspectives and expectations (Kim, et al., 2009). Known as a dynamic and highly international learning environment in the region, Sovania University of Applied Science always notices to promote the quality of student services, in which, school meal is one of their priorities. For these reasons, the research on student satisfaction with the university lunch is necessarily conducted to find the solutions to improve the quality of lunch service provided by Antell Round Restaurant in Savonia.
Many researchers have investigated the importance of customer satisfaction in foodservice (Ibrahim et al., 2018; Yuksel & Yuksel, 2002) because it leads to repeat patronage and invent new customers. Among the factors identified as driving to customer satisfaction in the on-campus foodservice are price, quality of service, quality of food, and atmosphere. To date, there is no published empirical evidence showing the current state of Student satisfaction with the quality of University Lunch. Thus, this study aims to determine the extent to which price, quality of food and atmosphere influence student's satisfaction using Antell Round Restaurant in Savonia as a case study.
1.2 Statement of the Problem
The higher education sector in Sovania has undergone enormous growth in recent years. According to Ministry of Education (MOE, 2009), the number of higher education institutions and the intake capacity of both the undergraduate and graduate programmes in public higher education are increasing rapidly. However, the rapid increase in the gross enrolment rate has challenged the overall quality of education, particularly in the context of severely limited resources including the types of food that the student eat within the campus(UNICEF, 2014). Having recognized these problems, the Ministry of Education (MOE) is currently engaged in a highly motivated effort to reform the country’s higher education system including quality improvement programood that the student take. In spite of this, students are still complaining of lack of satisfaction with the kind of lunch they get in the school campus. Sovania University of Applied Science, as a governmental organization, is engaged in in seeking for ways to improve the food services of the students within the campus. It based on this background that the present study seek to examine the Student satisfaction with the quality of University Lunch using Antell Round Restaurant in Savonia as a case study.
